During the winter season (December to March), SUSHI JAPAN offers sushi catering services to high-net-worth inbound tourists visiting Hokkaido’s Niseko.
We are currently looking for dedicated and ambitious sushi chefs actively working in Japan to join us as contract-based partners.

Unlike typical sushi restaurants or catering services, SUSHI JAPAN offers catering to luxury accommodations costing hundreds of thousands of yen per night.
Due to providing services at various accommodations every day, adaptability and the ability to cater to guests of all nationalities are essential.
However, the experience of direct communication with guests in their private spaces allows chefs to enhance their careers, develop their skills in serving high-net-worth clients, and gain global awareness.

Job Description You will provide sushi catering services at luxury accommodations in the Niseko area, primarily serving high-net-worth inbound guests from Hong Kong and Australia.

This includes:
Procuring ingredients, preparation, setup, cleanup, cooking, serving, and communication with clients.
Taking photos for social media and reporting to the marketing team.
Leading a team consisting of serving staff and collaborating effectively.
Using POCKETALK (automatic translator) for communication with clients.

Qualifications

  • ・Minimum 5 years of practical experience as a sushi chef. ※ (Any type of establishment is acceptable, including high-end restaurants, hotels, or kappo-style establishments.)
  • ・Must have been actively working as a chef within the last 6 months.
  • ・We welcome those already running their own sushi restaurant or catering business.
  • ・Comfortable interacting with international clients. ※ (No English proficiency required as POCKETALK is provided.)
  • ・Must be available to work full-time in the Niseko area from late November 2025 to March.
  • ・Valid driver’s license required with a personal four-wheel-drive vehicle. ※ (Vehicle must have winter tires, optional insurance, and JAF membership.)

Breakdown of work hours
Preparation: 2 hours, Travel: 1.5 hours (each way), Setup: 1 hour, Service: 2 hours, Cleanup: 30 minutes

※Typical Start Time: Around 11:00 AM to 12:00 PM
※Breaks: Days off must be confirmed at least 3 days in advance.
※Team Structure: 2 to 4 members per team.

Compensation

①Guaranteed Minimum: ¥200,000/month × 4 months (November to March)

②Incentive: 15% of total sales (including tax) for completed services.

※The higher of ① or ② will be paid. (Guaranteed payment applies even if you only work one day.)
※Incentives are applied after the training period.
※Training Period: Approximately 2 weeks or 5 trips (whichever comes first).
 During training, hourly wage: ¥2,500 (including tax).
※Payment: Monthly closing, payment by the 15th of the following month.
※Employment Type: Contract-based.
※Additional Tips: Provided separately.

Cost Responsibilities

The company will cover all basic operational costs, including: (Ingredients・Tableware・Equipment and consumables・Uniforms・Part-time labor costs)

※However, the following expenses are covered by your compensation:
Vehicle-related Costs: Fuel, winter tires, tire changes, oil changes, insurance, and all other vehicle expenses.
Hygiene Costs: Uniform cleaning, haircuts, dental hygiene, grooming, etc.
Communication Costs: Smartphone, computer, tablet, and all related communication expenses.
